The Songyuan area of Meixian is reknown for its abundant bitter bamboo shoots. After harvesting,
the shoots are blanched and soaked in light salt water before being bottled, making them a staple
ingredient in local households. Combining pork, pickled mustard greens and seafood in cooking is a
signature of Meixian’s culinary tradition, capturing the essence of comforting home-style flavours.
