■ Dish Story
The origin of the rice noodle balls reflect the frugality and ingenuity of the Hakka people. By using
leftover rice noodle scraps and inexpensive lard residue, combined with simple tapioca starch, they
created a surprisingly delicious dish. Today, rice noodle balls are a signature delicacy of Xiyang
White Palace and a must-try dish for visitors.
