高升菜以平远本地盛产的新鲜冬笋为主料(其他季节可用笋干替代),搭配其他辅料,以炒丝
的形式呈现。竹子在客家文化中寓意“节节高”,因此食用此菜寓意平步青云,步步高升。
■ Dish Story
This dish uses fresh winter bamboo shoots from Pingyuan while dried bamboo shoots being a suit-
able substitute during other seasons, combined with other ingredients and presented as a stir-fried
shredded dish. In Hakka culture, bamboo symbolizes “continuous growth” or “rising higher with each
step”, making this dish as a representation of prosperous, success and smooth progress.
