7.3 Food
7.3.1 Food Condition
7.3.1.1 Safe and Unadulterated
7.1.1.1.1 Sound Condition (15 C)
FOOD must be safe and unadulterated.
7.3.2 Food Sources
7.3.2.1 Lawful Sourcing
7.3.2.1.1 Comply with Law (15 C)
FOOD must be obtained from sources that comply with applicable
local, state, federal, or country of origin’s statutes, regulations, and
ordinances.
7.3.2.1.2 Food from Private Home (15 C)
FOOD prepared in a private home must not be used or offered for
human consumption on a vessel.
7.3.2.1.3 Fish for Undercooked Consumption
FISH—other than MOLLUSCAN SHELLFISH—intended for
consumption in their raw form may be served if they are
obtained from a supplier that freezes the FISH to destroy
parasites or if they are frozen on the vessel and records are
retained.
7.3.2.1.4 Steaks (15 C)
WHOLE-MUSCLE, INTACT BEEF steaks intended for
consumption in an undercooked form without a CONSUMER
advisory must be
• Obtained from a FOOD-PROCESSING PLANT that
packages the steaks and labels them to indicate they meet
the definition of WHOLE-MUSCLE, INTACT BEEF; or
• Cut individually on a vessel from WHOLE-MUSCLE,
INTACT BEEF labeled by a FOOD-PROCESSING
PLANT to indicate the beef meets the definition of
WHOLE-MUSCLE, INTACT BEEF, and prepared so they
remain intact.
7.3.2.1.5 Hermetically Sealed Container (15 C)
FOOD in a HERMETICALLY SEALED CONTAINER must be
obtained from a FOOD-PROCESSING PLANT regulated by the
FOOD regulatory agency that has jurisdiction over the plant.
