Install a drainage system for automatic clean-in-place hood-washing systems. A
drainage system is not required for normal grease and condensate hoods or for
locations where cleaning solutions are applied manually to hood assemblies.

                   14.8 Manufacturer’s Recommendations

Install all ventilation systems in accordance with the manufacturer’s
                          recommendations.

                       14.8.1 Test System
Test each system using a method that determines if the system is properly
balanced for normal operating conditions. Provide written documentation of
                                the test results.

15.0 Provision Rooms, Walk-In Refrigerators and Freezers, and Food

                                   • Close the DECKHEAD to prevent food contamination from dust and
debris falling from DECKHEADS and DECKHEAD-mounted
                                       equipment and utilities.

Provide protection to prevent damage to BULKHEADS from pallet handling
equipment (e.g., forklifts, pallet jacks, etc.) in areas through which FOOD is
                                stored or transferred.
