54 DinnersPuddings In The CornerPreparation time:30 minutesCooking time:30 minutesServes: 4IngredientsFor the minced beef:1 tbsp vegetable oil450g minced beef1 onion 3 tbsps tomato pur%u00e9e2 tsps Worcestershire sauce100ml red wine (optional)1 tbsp all-purpose flour350ml beef stockA pinch of salt and pepperFor the dumplings:220g all-purpose flour1 tsp baking powderA pinch of salt1 %u00bd tbsps fresh parsley, chopped5 tbsps shredded beef suet120 ml waterAs you%u2019ve probably gathered by now, much of the cuisine on Wearside is built around keeping you warm and keeping you full. Puddings in the corner (or mince and dumplings as it is now better known by) is no different. A proper good old fashioned dinner.Instructions1. Pre heat the oven to 200%u00b0C/180%u00b0C fan oven.2. Fry the beef in a frying pan until it starts to brown. Add the onion and fry until they soften. Then add the tomato paste, Worcestershire sauce and (if using) red wine. Leave to simmer until the liquid has evaporated. 3. Add the flour. Cook for 1 minute, then add the beef stock, salt and pepper. Simmer for 5 minutes until thickened.4. Now for the dumplings. Add the flour, baking powder, salt, chopped parsley and suet to a mixing bowl. Use your fingers to rub the suet into the flour until it looks like crumbs. Add water and mix until a soft dough forms, but be careful not to make them too sticky or wet.5. Cut the dough in half, then quarters then into eighths. Roll into balls.6. Take the mince pan off the heat and put the dough balls on the top. Transfer the pan (if oven proof, or put in an oven dish) to the oven and bake for 20 minutes until the dumplings are browned.7. Serve with some mashed potatoes and green vegetables.Gan git posh: Buy pre made dumplings from a supermarket.Save the gissies: Use vegetarian shredded suet, vegetarian mince and vegetable stock.
