  If you are barbecuing, then you probably already have a plan for resting your meat once it comes off the grill or pit. Cambro has al- ways been a trusted name to help with that process. Now they are offering a product that just about any barbecuer can afford.
The new Cam GoBox series of food trans- porters and holders offer the ideal way to hold or transport just about anything you can imagine. These units can work as a hot or cold storage box and have about a 4-hour safe tem- perature window. They also make inserts to increase the amount of time items can be held.
Our test unit was the EPP 180 XLT top loading box. The exterior measurements are 15.4 inches tall by 24 inches long by 17 inches wide; interior measurements are 12.6 inches tall by 21.6 inches long by 14.5 inches wide. It
has a capacity of 68.2 quarts. The box is super light when empty as well compared to the older versions of the Cambro units. They also make a front-loading version of these boxes as well that have slots in the sides for holding standard sized full and half alu-
minum pans.
Our tests proved these new GoBox units will hold more and longer then they advertise. We put over 60 lbs. of pulled pork in our box and it only dropped eight degrees over three hours. To accomplish this task we used bags and tied them off before stacking them into the unit.
Our first test on the unit was with a Boston butt that had an internal temperature of 201 degrees when placed inside the unit. The butt was covered and sitting inside a half pan with some of the juices from the cooking process present. Twelve hours later, our butt still had an internal temperature of 149 degrees.
After several other tests, our unit still looks brand new and is showing no signs of normal wear. To say we have abused the unit would undoubtedly be an understatement as we were curious about how would it hold up under extended use. We can honestly say these units are ready for just about any environment you may put it in.

Our tests with their products proved to be off the charts good. We did a competition type practice on one of their Boston Butts and found the texture was much different from the standard pork we usually cook.
The marble content was very evident in every sample we got to test. The brands 40 years of selective breeding has undoubtedly created a special breed of pork, and we could taste the difference in every test we performed. Our rib test with nothing but their sig- nature rub proved to be our favorite test item, but certainly not by a vast margin.
