FUTURE OF FOOD
Wiley’s chief future officer Brett Wiskar kicks off the whole seminar series talking about how businesses can better understand and prepare for the future of their sector, markets and supply chains. Wiskar is going to look at food sector trends out to 2040, touching on the role of technology in producing safer and more sustainable foods; the rise of personalisation and how it’s going to change food production and retail; the opportunities for disruptive tech; how we can benefit from disruption; and where capital is needed to secure the next wave of innovation.
CONSUMER TREND IMPACTS IN FIVE YEARS Tetra Pak Oceania’s managing director Andrew Pooch will look at how the pandemic disrupted the status quo, and has resulted in environmental, health and economic issues being pushed to the forefront for consumers.
Pooch will delve into consumers’ views and engagement with food and beverage companies – particularly when it comes to packaging – ways that is changing and how industry must adapt (see also p58).
VENTURE SCIENCE AND COMPANY CREATION
Not to be missed, director of CSIRO’s Company Creation Duncan Ferguson will present on how CSIRO is scaling a new model for engaging with industry to collaboratively build new ventures with investors and entrepreneurs that will develop and deliver science and technology to address big market opportunities. Ferguson will outline how the new ventures provide a vehicle for collaborating with industry, unconstrained by the corporate challenges of annual budget cycles, internal strategy shifts, mobility of senior management, competing internal innovation priorities and a narrow field of opportunity. FUTURE FOOD PRODUCTION SYSTEMS The Australian Institute of Food Science and Technology’s (AIFST) is presenting this thoughtful session with Tom Lewis of Stable Food Group and Jonty Barnett of Forager Food Co. The seminar will give an overview of recent developments in shelf-stable foods: those that can be transported and stored independent of any cold chain logistics. Lewis will talk about Microwave Assisted Thermal Sterilisation (MATS), Stable Food Group’s first commercial production operation in India, and opportunities to establish MATS co-manufacturing capability in Australia. Barnett will look at new production systems that are coming online, including freeze-drying technology, novel ingredients, and advanced processing technologies. ✷
