All the fry, without the fat
Heat and Control is answering the call of the rising popularity of air frying with the release of its AirFry System for food manufacturers.
THE popularity of air frying has continued to grow over the last decade and brands are looking to take advantage of new product opportunities in the market.
Equipment manufacturer Heat and Control has brought together technologies to create its AirFry System that allows food producers to create lower oil content foods.
The AirFry System creates air fried/oven fried products that have the taste, texture, and appearance of fried foods
without using traditional (submersion) frying methods.
It provides a continuous means to produce a “fried-like” product by applying a controlled volume of topical oil, followed by pressurised high velocity cooking atmosphere from an impingement oven.
Heat and Control Processing Industry manager Doug Kozenski said customers have the option for a completely new system, or could retrofit an existing impingement oven with a spray applicator system
with minimal investment. “Heat and Control wanted
to assist its customers in producing a high-quality product with fried characteristics without using the traditional submersion frying system.
“We have been working closely with the industry to develop innovative ways to adapt to consumer trends demanding low oil content,” Kozenski said.
The system utilises highly accurate Spray Dynamics Oil application equipment, which
ensures complete and uniform coverage of the product while keeping oil use to a minimum.
The most uniform and fastest air fry time in the industry is guaranteed when the Spray Dynamics equipment is paired with the highly uniform airflow and high levels of process parameter adjustment offered in Heat and Control’s AirForce Impingement Oven.
The AirFry System also works with standard batter and breading application systems. ✷
