SWEET POTATO COOKIES SERVING: 12

COOKING: 12-15 minutes
♥ 1 large Sweet Potato ♥ 8 tbsp Oats
♥ 4 tsp Coconut Oil,
m softened
♥ 1 Egg
♥ 1 tsp Ground Cinnamon ♥ 2 tsp Vanilla Extract
                 METHOD
1. Preheat oven to 200C / fan 180C.
2. Peel, cube and steam the sweet potato.
3. Leave to cool to room temperature uncovered so
jjjthe steam escapes and dries out the potato slightly. 4. In a blender, whizz the oats till powder.
5. Mix together the cooled sweet potato cubes,
jjjjcoconut oil, egg, cinnamon and vanilla, and add
jjjjoats.
6. Combine together.
7. Pour the mixture into 12 circles on a oil-jgreased
jjjjbaking tray.
8. Bake for 12-15 minutes until they are golden at
jjjedges, but still soft in the centre.
9. Remove and place on a wire tray to cool.
