SWEET CORN FRITTERS SERVING: 24

♥ 1 tin Sweet Corn
♥ 1/2cup Wholemeal Flour ♥ 1 tsp Baking powder
♥ 2 large Eggs
♥ 3 tbsp Sweet Chilli nnn-
nn Sauce (optional)
♥ 4 spring onions, finely
kk chopped
♥ 1 small carrot, grated ♥ 1 small zucchini, grated ♥ 1/2 small red capsium,
jjjj finely chopped
♥ 1/3 cup tasty cheese,
jjjj grated
♥ Canola oil, for frying
METHOD
1. Blend 1 tin of sweet corn until finely chopped. 2. Combine the flour, baking powder and eggs in a
jjjjjbowl.
3. Whisk in sweet chilli sauce and finely chopped
jjjjsweet corn.
4. Add all other ingredients.
5. Heat a small amount of the canola oil in a fryjpan. 6. When hot, fry heaped tablespoons of fritter
jjjmixture for 2-3 minutes on each side until golden
jjjand cooked through.
7. Transfer to kitchen paper.
