PESTO ON ZUCCHINI PASTA SERVING: 4

♥ 2 cups fresh basil leaves ♥ 1/2 cup freshly grated
jjjjparmesan cheese ♥ 1/2 cup extra virgin
jjjjolivejoil
♥ 1/3 cup pine nuts
♥ 3 garlic cloves, minced ♥ Salt and Pepper, to taste ♥ 3 large zucchinis, salt
METHOD
BASIL METHOD
1. Place the basil leaves and pine nuts into a blender
jjjand whiz several times.
2. Add the garlic and parmesan cheese. Whiz several
jjjjtimes more.
3. Scrape down the sizes of the blender with a rubber
jjjspatula.
4. While the blender is running, slowly add the olive
jjjoil in a steady small stream.
5. Occasionally stop the blender to scrape down the
jjjsides.
6. Pinch in salt and pepper to taste.
ZUCCHINI PASTA METHOD
7. Peel zucchinis and make noodles with a spiralizer. 8. Mix a bit of salt through the zucchini (helps draw
jjjout the liquid).
9. Cook in the microwave for 6 minutes or until soft. 10. Drain out the liquid from the zucchini using a
jjjjjjsalad spinner.
11. Combine with pesto mixture.
