1 pomelo, broken to bite-sized pieces 16 glass prawns, just cooked
2 tbsp grated palm sugar
1 1/2 tbsp fish sauce
1 1/2 tbsp lime juice
1 fresh chilli, finely sliced
1/2 cup roasted chopped peanuts 1/2 cup toasted coconut flakes
2 tbsp crispy fried garlic
2 tbsp crispy fried onion
1 small pack coriander, leaves only
INSTRUCTIONS
1. Mix all the salad dressing ingredients in a bowl.
2. In a large bowl, combine the prawns and pomelo, then pour the dressing and toss salad lightly.
3. Lay 4 salad plates on the counter top, and divide salad equally.
4. Mix the garnish gently,
and pour over each salad plate. Serve immediately.
