FAT TOM—Conditions for Bacteria to Grow








         Acidity:


          pH is the measure of acidity



              o The pH scale ranges from 0  to 14


              o A value of zero is highly acidic


              o A value of 14 is highly alkaline


              o A pH of 7 is neutral


          Bacteria grow best in food with a

              pH that is neutral to slightly acidic
