P2 HEALTH HAZARD (4rd Review)
RISKS
If any raw materials, ingredients or finished products that Shangri-La hotels have ordered from vendors become subject to a ban or a recall, the hotel must not use them. This includes raw materials, ingredients and products that do not comply with the quality specification as well as food safety specification as defined in country laws and regulations and local compulsory food safety standard.
Customers may be at risk of food borne illness if banned / recalled products are used.
POLICY
1) To ensure Shangri-La guests’ health and safety, all hotels are required to take immediate action on identifying all banned and recalled products in kitchens and storage when advised of a Food Safety / Quality Alert. These should be segregated and labeled as Do Not Use.
2) If any banned or recalled products have been used and are in the process of being served, the food should be discarded.
3) For effective traceability, all food product specifications must be kept updated and accessible to Hygiene Manager, Executive Chef and Director of F&B.
4) All banned products recorded by the Ministry of Health in respective countries should not be consumed in hotels until clearance statement is announced by the government.
5) Purchasing team from individual hotel should collect latest information from official website and ensure the banned and recalled products are not present in the latest order list.
6) All health certificates should be kept and available in the Purchasing office at any time. Purchasing manager should record the banned and recalled product list relative to Shangri-La food category on a monthly basis. This information to be shared and or discussed with Hygiene Manager, Executive Chef and Director of F&B.
