PROJECT BRIEF
Dining out can often be an uncomfortable or even threatening experience for individuals with cognitive and physical disabilities. Often times a public dining space can be very over stimulating or impossible to navigate. The challenge of this project is to create a restaurant that promotes inclusivity for this demographic as well as providing employment opportunities for those clients.
The design of the space should promote safe training for employees with disabilities to help give them a sense of independence. It should also create a dining experience for customers that is comfortable, easy to maneuver through, and is not overwhelming to the senses. The space needs to follow all ADA codes and must be completely accessible. Both employees and clientele should be able to interact and learn from one another as they work on improving social skills and serving the general population.
The restaurant will serve as a café in the mornings and afternoons, and a more casual eatery serving small dishes and drinks in the evening. The restaurant kitchen should be outfitted to produce healthy food options and must be equipped to make bakery items. There should also be provisions made for the sale of bottled beers and wine.
The restaurant floor should be able to comfortably sit 60 people at tables and there should be an accessible bar that can seat 16. The space should be able to hold 80 people at maximum capacity.
In addition to the public dining space and kitchen, there must be space in the back of the house used for preparation, serving, and cleanup facilities, as well as freezer, refrigeration, and dry food storage. An office space with storage and two unisex style, ADA restrooms must also be provided.
