            Raspberry Vinegar
Delicious with duck, game, and seafood — a pantry must-have for all foodies!

 Ingredients
• 1 lb (450 g) fresh raspberries
• 2 1⁄4 cups (550 ml) white wine vinegar
Preparation
• Reserve 6 raspberries. Put remaining raspberries into a salad bowl and crush to release juices.
• Pour vinegar over raspberries, cover bowl with a cloth, and let infuse for 24 hours at room temperature.
• Filter.
• Put the 6 reserved raspberries into a 750 ml bottle and pour in vinegar and raspberry mixture.
• Seal tightly and let steep 3 days before using.
