            Old-Fashioned Rose Vinegar

 Ingredients
• 1⁄3 cup (80 ml) rose petals
• 4 cups (1 L) white wine vinegar
Preparation
• Gently remove white petal bases.
• Put petals into a clean, dry wide neck bottle. Add vinegar.
• Seal bottle tightly and place in a bright, sunny place to allow flavors to fully blend.
• Let steep for 10 days or more, shaking bottle occasionally.
• Filter vinegar with a sieve covered in cheesecloth and decant into a clean, dry bottle.
• Seal tightly and store in a cool, dry, dark place.
Variation
• Use 1⁄3 cup (80 ml) rose petals, tarragon and lavender (2 tbsp each or 25 g each), and
4 cups (1 L) white wine vinegar, using the same preparation method as the rose vinegar.
 Rose petal vinegar has a thousand and one uses, from household to medicinal to cosmetic. For a refreshing facial toner that helps heal blemishes, add
1 part fragrant red rose petals to 8 parts distilled water. It also soothes sunburns and helps reduce acne.
A teaspoon of rose vinegar added to a cup of warm water makes an excellent gargling solution for sore throats
and inflammations of the mucous membranes.
