            Old-Fashioned Marigold Vinegar
This extremely fragrant vinegar adds depth to salads, rice, vegetables, and meats.
 Prep time
  20 minutes
 Steep time
   10 days minimum
 Ingredients
• 1⁄2 cup (125 ml) marigold petals • 4 cups (1 L) white wine vinegar
Preparation
• Remove spurs and gently wash and dry marigold petals.
• Put petals into a clean, dry wide neck bottle. Add vinegar.
• Seal bottle tightly and place in a bright, sunny place to allow flavors to fully blend.
• Let steep for 10 days or more, shaking bottle occasionally.
• Filter vinegar with a sieve covered in cheesecloth and decant into a clean, dry bottle.
• Seal tightly and store in a cool, dry, dark place.
