            Italian Salad
A simple salad dressed up with an aromatic herb and cider vinegar.

 Preparation
• In a food processor or with a whisk, blend apple cider vinegar, garlic, oregano, thyme, basil, cayenne pepper, and sugar. Gradually blend in the oil.
• In a large bowl, combine spinach, onion, and vinaigrette. Salt and pepper to taste.
• Serve.
Ingredients
• 1 tsp (15 ml) apple cider vinegar • 1 clove garlic, minced
• 1⁄2 tsp (2.5 ml) dried oregano
• 1⁄2 tsp (2.5 ml) dried thyme
• 1⁄2 tsp (2.5 ml) dried basil
• 1⁄2 tsp (2.5 ml) cayenne pepper
• Pinch of sugar
• 1⁄3 cup (80 ml) extra virgin olive oil
• 1 1⁄2 lb (675 g) fresh spinach, washed with stems removed
• 1 medium red onion, finely chopped • Salt and freshly ground pepper
