            Celeriac Salad
The root of the celery plant has a mild, delicate flavor that is enhanced with cider vinegar and a generous splash of tart lemon juice.

 Preparation
• Peel and grate celeriac. Mix with lemon juice to keep it from turning brown.
• Cut endives into medium-sized pieces.
• Remove stems from mushrooms and cut into thin slices.
• Peel apple and cut into thin strips.
• Combine chopped ingredients.
• Combine mayonnaise, vinegar, paprika, salt and pepper, and add to the vegetable mixture.
• Sprinkle with almonds right before serving.
Ingredients
Serves 4 to 6
• 1 celeriac
• Juice of 1 lemon
• 2 endives
• 1⁄2 cup (125 ml) fresh mushrooms
• 1 apple
• 1⁄2 cup (125 ml) mayonnaise
• 1 tbsp (15 ml) apple cider vinegar
• 1 pinch paprika
• Salt and pepper
• 1 tbsp (15 ml) almonds, finely chopped
