            Two-Bean Salad with Feta
A bright, appetizing, nutrient-packed salad that can be made year-round.

• Combine all ingredients. Add vinaigrette and toss to coat.
Ingredients
Serves 4 to 6
• 19 oz can (540 ml) red kidney beans, drained and rinsed
• 19 oz can (540 ml) red chickpeas, drained and rinsed
• 3 tomatoes, diced
• 2 cups (500 ml) fresh parsley, roughly chopped
• 1⁄2 green or red pepper, chopped
• 1⁄2 cup (125 ml) feta cheese, cut into small cubes
• 1⁄3 cup (80 ml) red onion, chopped
  Lemon Dijon Vinaigrette
A bean salad’s perfect companion!
Preparation
• Combine ingredients and pour over salad.

• 2 tbsp (30 ml) canola oil
• 1 tbsp (15 ml) lemon juice
• 1⁄2 tbsp (7,5 ml) apple cider vinegar • 1⁄2 tbsp (7,5 ml) Dijon mustard
• Salt and pepper to taste
