BUTTERMILK PANCAKE RECIPE
Ingredients: Butter and maple syrup for serving
3 cups all-purpose flour
1/3 cup sugar For a DIY Buttermilk:
1 teaspoon baking powder Use 1 cup milk (full or medium fat)
1/2 teaspoon baking soda Stir in 2 tablespoons fresh lemon juice or
1 teaspoon salt white vinegar into the milk. Let it sit for 30
2 large eggs minutes at room temperature until the milk
2 1/2 cups buttermilk begins to curdle and becomes acidic.
1 teaspoon vanilla extract/fresh Vanilla Use in place of buttermilk in the recipe as
1 stick unsalted butter, melted and cooled, it calls for. If you don’t use it straight away,
plus more for brushing store it in the fridge for up to 3 days.
METHOD
1. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl. In a
separate bowl whisk the eggs, buttermilk, vanilla and melted butter. Fold the egg
mixture into the flour mixture until just combined.
2. Heat a griddle or large nonstick pan over medium heat; lightly brush with butter.
Pour 1/2 cup batter onto the griddle for each pancake and cook until the top and
bottom is lightly browned, estimated 3 minutes. If the pancakes are browning too
quickly, reduce the heat to medium-low. Flip over and continue cooking until golden
on the other side (1 more minute). Transfer to a plate. Repeat with remaining batter,
brushing the pan with more butter as necessary.
3. Serve with butter and syrup.
