Homemade Hashbrowns
from Sharon
Sharon has been part of the Veggie
Van program for about a year, and
it’s inspired her to get creative in the
kitchen. One of her favorite discoveries
is homemade hash browns—simple,
wholesome, and made with the fresh
ingredients she receives. Healthier than
store-bought, the recipe makes plenty
to share or enjoy throughout the week,
reminding her of the joy in making
something wonderful from the basics.
For Sharon, the Veggie Van is more
than a source of fresh vegetables—it’s
been a blessing that’s sparked her
creativity and confidence in the kitchen.
She hopes her story inspires others
to see how much joy and nourishment
can come from something so simple.
Ingredients
•
2 large potatoes, peeled and grated
•
Salt and pepper to taste
•
1-2 tablespoons of olive oil or butter
Directions
1. Place grated potatoes in
a clean towel and squeeze
out as much as possible.
2. Heat oil or butter in a skillet
over medium heat.
3. Add potatoes, pressing them
down with a spatula.
4. Cook for about 5 minutes or
until golden brown, then flip and
cook for another 3-5 minutes.
5. Season with salt and
pepper and enjoy!
