Recipe
Even after just three months with the
Veggie Van program, Monserrate
is eager to share her joy through a
special family recipe passed down
from her mother. For her, this dish
embodies tradition and comfort, a
cornerstone of family gatherings. She
emphasizes that good things should be
shared, encouraging others to invite
loved ones to enjoy the abundant
servings this recipe provides,
fostering connection and warmth.
The Veggie Van has significantly
helped Monserrate, especially with
current high prices, by providing fresh
ingredients. This access allows her to
bring a taste of her heritage to others,
and she dedicates her recipe to people
everywhere, hoping they experience
the love infused in every bite.
Ingredients

2 potatoes
•
1 sweet potato
•
1 onion
•

•
1 plantain
1 chili pepper
1 corn cob

Chicken or vegetable broth
Salt and pepper to taste
Directions
1. 2. 3. Peel and chop the potatoes,
sweet potato, onion,
plantain and chili pepper.
Bring the broth to a
boil in a large pot.
Add all the ingredients and
simmer over medium heat
for 30-40 minutes.
4. Season with salt and
pepper to taste.
5. Serve hot with bread or arepas.
