FOOD SAFETY IN CATERING
LEVEL 2
Overview
This basic quali cation will bene t all crew working in an environment where food is prepared, cooked and served. The course is suitable for crew looking for their rst on-board position, as well as those already working in the yachting industry. This is an entry level, one-day course (Food Safety in Catering Level 2), and one necessary under U.K. and European law for all persons working in a catering environment.
Course outline & key outcomes
Students will learn the importance of food safety and gain knowledge of the systems, techniques and procedures involved. Students will also be taught to understand and control food safety risks, considering topics such as personal hygiene, food storage, cooking and handling. The course will also provide students with the con dence and expertise to safely deliver high quality food to the guest.
Modules
The course will cover:
• Introduction to food safety
• Law and legal requirements
• Food safety hazards
• Temperatures
• Refrigeration, chilling and cold handling of foods
• Cooking, hot holding and reheating of foods
• Food handlers
• Principles of safe food and storage
• Cleaning
• Food premises and equipment
Course prerequisites
There are no certi ed prerequisites for this course. It is, highly recommended to all crew who play a role in food handling (whether head chef, crew chef, steward/ ess and even those using crew mess food-based facilities).
Price
Prices are set at €195 per person, but can also be be taken as part of an on-board training package for €150 per student.
