                                                   Remoulade



                                                  Yields one Quart

           If you have ever been to King’s Inn restaurant in Rivera, Texas, Then you

          know the tar tar sauce they are famous for. This is my take on that classic:




                             Ingredients


                       ¼ cup creole Mustard
                         2 cups mayonnaise
                 1 clove garlic, mashed into paste
                        ½ cup minced celery                     Combine ingredients and reserve. It

                   2 tablespoons minced chives
                     1 tablespoon horseradish                          will keep for a week in the
                        2 teaspoons paprika

                        1 teaspoon cayenne                                     refrigerator.
                     ¼ teaspoon black pepper
                           1 teaspoon salt
                  2 tablespoons chopped capers
                      2 tablespoons chopped

                             cornichons
                   8 captain’s wafers, crushed
