             Braised beef brisket with chicory, ham and mustard


             Serves 8 | Preparation time: 45 minutes | Cooking time: 3-4 hours (excluding time to
             cool the beef overnight)



             What you’ll need:



             Ingredients



             For the beef brisket and sauce

             2 kg beef brisket
             Salt and freshly ground pepper
             1 head of celery, roughly chopped

             1 bunch of leeks, roughly chopped
             2 large onions, roughly chopped
             1 bulb of garlic, peeled and roughly chopped
             4 sprigs of rosemary
             1L red wine
             1L chicken stock
             30g butter

             30g flour
             150ml cream

             For the chicory, ham and mustard
