             Coq au vin rouge with mashed potato


             Serves 4 | Preparation time: 30 minutes | Cooking time: 45 minutes


             What you’ll need:



             Ingredients



             For the coq au vin rouge

             1 free-range chicken

             Salt and freshly ground pepper
             1 cup (250ml) flour
             100ml canola oil
             200g streaky bacon
             300g baby onions, peeled
             250g button mushrooms
             5 sprigs of rosemary
             2 garlic cloves, chopped

             1L red wine

             For the mashed potato


             2kg potatoes
             1 tsp (5ml) salt
             200g butter, softened
