             Salade Niçoise with vinaigrette


             Serves 4 | Preparation time: 30 minutes


             What you’ll need:



             Ingredients



             For the vinaigrette

             Salt

             Freshly ground pepper
             Pinch of sugar
             1 clove of garlic, crushed
             3 Tbsp (45ml) red wine vinegar
             ½ cup (125ml) olive oil


             For the salade Niçoise

             2 Tbsp (30ml) salt

             170g fine green beans, trimmed
             4 small Nicola potatoes, cleaned
             1 head of butter lettuce, washed (or a variety of lettuce leaves)
             1 green pepper, seeded and thinly sliced
             4 ripe plum tomatoes, quartered
             8 anchovy fillets
