An introduction to cooking with potatoes

             Shopping and storage
When you’re at the supermarket, first think about which type of dish you’re planning to
make and which types of potatoes are best suited to it. To help you along, we’ve included a
             helpful guide below.

When selecting potatoes, it’s easy to just throw a handful of them into a bag without closely
inspecting them. But the truth is that an excellent potato dish begins with shopping. So,
pretend you have oodles of time, and put your love and attention into selecting the perfect
potato. When choosing one, squeeze it gently to make sure it’s firm all round. Avoid green
or sprouting potatoes at all costs.

In terms of storage, potatoes are best kept in a dark, cool spot. If they’re exposed to sunlight
and humid temperatures, they may start to sprout.
