             Apricot and vanilla jam


             Makes approximately 4 cups | Preparation time: 30 minutes | Cooking time: 1–1 ½

             What you’ll need:



             Ingredients


             1.250 L (5 cups) just boiled water
             500g dried apricots
             750g light brown sugar
             Juice of 1 lemon
             1 vanilla pod, sliced lengthways


             Tools


             Large heavy-based pot
             Wooden spoon
             Measuring jug or cups

             Citrus reamer
             Knife
             Chopping board
             Four sterilised glass jars, for storage
