             Crunchy phyllo tarts with fillings

             What you’ll need:



             Ingredients



             For the phyllo cups

             2 sheets of phyllo pastry, defrosted and kept under a damp tea towel. Note: A 500g box
             should contain approximately 8-10 sheets.
             100g butter, melted


             For the candied tomatoes, brazil nut, Languedoc cheese and rocket
             filling


             Olive oil
             200g cherry tomatoes
             2 Tbsp (30ml) sugar
             Salt and freshly ground black pepper
             20ml balsamic vinegar
             40g brazil nuts, roasted and coarsely chopped
