A Very Merry Festive Feast

             Roast turkey with cranberry and apricot stuffing and perfectly
             roasted potatoes


             Serves 8-10 | Preparation time: 1 hour | Cooking time: Approximately 3 hours


             What you’ll need:



             Ingredients




             For the stuffing

             1 Tbsp (15ml) olive oil
             200g streaky bacon, roughly chopped
             2 celery sticks, roughly chopped
             1 onion, finely chopped

             1 Tbsp (15ml) chopped garlic
             1 egg
             200ml cream
             1 big handful fresh breadcrumbs
             300g chicken sausages, mince removed from the sausage casing
             1 handful dried apricots, coarsely chopped
             1 handful dried cranberries
             Pinch of nutmeg
             Zest of 1 lemon
             Salt and freshly ground black pepper
