             Knife
             Chopping board

             Frying pan
             Food processor or stick blender
             Wire rack
             Mixing bowl
             Griddle pan

             What to do:



             For the watercress dressing


               1.  Roughly chop the watercress and add to the base of a food processor.
               2.  Add the remaining ingredients, season with salt, pepper and a little sugar and blitz
                   together.
               3.  Spoon into a bowl and set aside before serving.


             For the salad


               1.  Preheat the oven to grill.
               2.  Lay the bacon onto a wire rack, place over a baking tray and then put into the oven.
               3.  Grill the bacon for a couple of minutes on either side or until golden and crispy.
               4.  Place the nectarines into a bowl and drizzle with a little olive oil.
               5.  Grill the nectarines in a hot griddle pan, allowing them to char slightly and blister
                   before turning them over. Remove from the heat and set aside to cool.
               6.  To assemble, arrange the mixed salad leaves onto a platter and add the nectarines,
                   goat cheese, crispy bacon strips and toasted pecan nuts.

               7.  Drizzle with a little watercress dressing, just before serving.
