             Red quinoa, roasted pear and gorgonzola salad




















             What you’ll need:




             Ingredients


             1 cup (250ml) red quinoa
             2 cups (500ml) water (or amount as given on the packet)
             3 ripe pears, cored and cut into rough chunks
             1 Tbsp (15ml) melted butter
             1 Tbsp (15ml) olive oil
             1 Tbsp (15ml) lemon juice
             Handful fresh rocket or baby spinach leaves, rinsed
             100g gorgonzola

             Salt and freshly ground black pepper, to season


             Tools


             Fine mesh sieve
             Saucepan
             Mixing bowl
             Kitchen spoons
             Griddle pan
