Red quinoa, roasted pear and gorgonzola salad
What you’ll need:
Ingredients
1 cup (250ml) red quinoa
2 cups (500ml) water (or amount as given on the packet)
3 ripe pears, cored and cut into rough chunks
1 Tbsp (15ml) melted butter
1 Tbsp (15ml) olive oil
1 Tbsp (15ml) lemon juice
Handful fresh rocket or baby spinach leaves, rinsed
100g gorgonzola
Salt and freshly ground black pepper, to season
