Quick Thai soup with chicken dumplings
Serves 4 | Preparation time: 15 minutes (excludes resting time for dumplings) |

What you’ll need:
Ingredients
For the dumplings
1 spring onion, finely chopped
1 tsp (5ml) fresh ginger, grated
1 red chili, roughly chopped
1 Tbsp (15ml) fresh coriander, roughly chopped
1 Tbsp (15ml) lime juice
300g skinless chicken thighs, de-boned
Salt
1 tsp (5ml) Chinese five-spice
1 tsp (5ml) fish sauce
1 whole egg (or 1-2 Tbsp cornflour, to bind)
For the Thai broth
1 Tbsp (15ml) vegetable oil
1 Tbsp (15ml) Thai red curry paste (or according to your taste)
