             Pea, courgette and mint soup with bacon croutons


             Serves 4 | Preparation time: 10 minutes | Cooking time: 20 minutes



















             What you’ll need:



             Ingredients


             1 Tbsp (15ml) olive oil
             1 medium onion, peeled and chopped

             2 large leeks, chopped
             6 medium courgettes, roughly chopped
             1 clove garlic, finely chopped
             800ml vegetable or chicken stock
             200g bacon, diced
             3 cups (750ml) frozen peas
             ¼ cup (60ml) fresh mint, chopped
             Juice of ½ lemon
             ½ cup (125ml) natural yoghurt
             Salt and freshly ground black pepper, to taste

             A pinch of sugar (optional)
             A handful of fresh pea shoots, to serve (optional)
