             Homemade granola with quick blueberry compote


             Serves 12 | Preparation time: 10 minutes | Baking time: 35-40 minutes



















             What you’ll need:



             Ingredients



             For the granola


             ¼ cup (60ml) apple juice
             ¼ cup (60ml) runny honey
             ¼ cup (60ml) coconut oil (or butter)
             2 cups (500ml) whole-rolled oats
             ¼  cup (60ml) desiccated or shredded coconut
             Pinch of ground cinnamon
             Pinch of ground ginger
             ½ tsp (2.5ml) grated nutmeg

             1 tsp (5ml) vanilla extract
             1 cup (250ml) roughly chopped raw pecans, blanched almonds and pistachios (or any nuts
             of your choice)
             ½ cup (125ml) dried apricots, roughly chopped
             ½ cup (125ml) dried cranberries


             For the blueberry compote
