Oat, fig and pistachio nut bars
Makes 12 bars | Preparation time: 15 minutes | Cooking time: 25-30 minutes
What you’ll need:
Ingredients
2 Tbsp (30ml) coconut oil
2 Tbsp (30ml) runny honey
2 Tbsp (30ml) unsweetened peanut butter
1 medium ripe banana, mashed
2 cups (500ml) whole rolled oats
½ tsp (2.5ml) ground cinnamon
½ tsp (2.5ml) ground ginger
1 tsp (5ml) vanilla extract
A pinch of salt
½ cup (125ml) dried figs, roughly chopped
½ cup (125ml) pistachio nuts, roughly chopped
¼ cup (60ml) desiccated or shredded coconut
