The basic sorbet ratio
To make a basic sorbet, combine 4 cups of fruit juice (lemon or something sweet) with
2 cups of simple syrup (1 cup sugar dissolved in 1 cup hot water).
A quick and easy cheat’s sorbet
A cheat’s sorbet is a wonderful thing - it’s simple to make and impressive to behold. Best of
all, you can achieve the same delicious frozen results without heaps of sugar or whisk
action. It’s all made in a blender and then left to freeze and harden. Remember to add the
liquid component to the jug first as this helps to protect and insulate the blade against the
frozen fruit. If you don’t have a powerful jug blender, just use fresh fruit and freeze the
mixture for longer until it hardens.
Remember to balance the flavours
If you’re using fruit like strawberry or lemon that have a distinct sharpness to them, it’s best
to add a little honey to balance the flavours.
Serving and storage
You can serve this frozen treat cut into slices or in scooped rounds, as you would ice cream.
Sorbet can be stored in an airtight container in the freezer for up to 3 months.

1. Banana or avocado is an excellent substitute for the smoothness that dairy brings to a
smoothie or cheat’s sorbet.
2. Save any fruit that is close to its 'best before' date by chopping it into one-cup portions
and storing in the freezer in sealable plastic bags or airtight containers. That way you
have an almost-instant breakfast smoothie snack when you need one. This also means
that your smoothie will always be nice and icy cold.
