             New potato, spinach and goat cheese frittata with a fresh
             tomato salsa
             Serves 4 | Preparation time: 20 minutes | Cooking time: 15 minutes
             What you’ll need:
             Ingredients
             For the frittata
             Butter, for frying
             300g new potatoes, cooked and sliced into rounds
             100g spinach, blanched
             8 eggs
             Salt and freshly ground black pepper
             120g goat cheese
             For the tomato salsa
             1 onion, finely chopped
             10g fresh ginger, peeled and finely chopped
             1 red chilli, roughly chopped (optional)
             2 handfuls baby cherry tomatoes, roughly chopped
