Four steps to jointing a chicken
Start at the wings. Make a small incision just below the joint, and then twist and
cut so that the wings come off cleanly.
Remove the legs and thighs. You should hear a beautiful pop as you take the
bone out of the shoulder joint. It’s much easier to remove the legs and thighs
before removing the breasts.
Remove the breasts. Make an incision on either side of the breastbone, draw the
blade down along the wishbone and then run the blade along the carcass until
you get right the way through.
Separate the legs from the thighs. Do this by cutting through the knuckle.
