The team at Emirates have been
hard at work trialling new concepts
for the summer redevelopment in
Highbury.

Highbury will be become a street
food hall hosting 5 different food
offers, and a coffee shop.

With this, came A LOT of food
tastings, trials with the client, and
customer research.

Along the journey, our culinary
experts, Chris Rickaby, Kapil
Kaushik, and Andi Redwood, have
trialled variations of mac ‘n’ cheese,
loaded fries, curries, big fresh baps,
and many more delicious, street
food inspired dishes (not a bad job
to be the taste tester).
