Here is a recipe for Pastéis de Nata. If you want to taste the original Pastéis de Belé, you’ll have to go to Lisbon.
Ingredients for 12:
180 g sugar, 2 tbsp our, 8 egg yolks, 500 ml cream, 1 pinch of salt, grated zest of 1 lemon, 500 grams puff pastry (in the fridge aisle), cinnamon for dusting
Preparation:
1. Use a mixer to combine the sugar, our, egg yolks, cream, salt and lemon zest. Place in a pan, and boil brie y, stirring constantly. Transfer to a boil and let cool until lukewarm. Cover with cling lm to prevent a skin forming.
2. Roll out the puff pastry and cut out circles that are large enough to t into muf n pans. Fill the moulds with pastry, and press it in.
3. Preheat the oven to 250 degrees. Fill the moulds with the custard until with a gap of 1cm from the top. Bake for 10 to 12 minutes on the middle shelf. Keep an eye on them! The surface should be caramelised and slightly dark.
4. Remove the tartlets from the oven, cool them on a wire rack, dust with cinnamon, and serve.
