Get Creative In The Kitchen Discover the colourful cake that is taking the baking world by
storm, plus decorate it like a pro with Ceri Griffiths’ steps
There may not be any gold at the end of this rainbow, but no matter how you choose
to decorate, a colourful treat is sure to leave a smile on anyone’s face. And the best part is, the tricky steps are all done for you! The Bakedin kit makes it super simple to create a spectacular hidden effect, so you can whip up a last-minute surprise suitable for any occasion.

  1Preheat the oven to 180°C/ 160°C Fan/Gas 4. Place one piece of the baking paper provided into the base of each tin, securing with butter
if required.
2In a mixing bowl, combine 60g of soft butter with the contents of bag 1 until it forms a crumb consistency. Add 1 egg and 20ml of milk and mix until smooth and creamy. Pour the 3mixture into a prepared tin and smooth out. Repeat step 2 with bags 2, 3 and 4, using a 4clean bowl and an empty baking tin each time.
Bake the cakes for 20-25 minutes, or until
a skewer comes out clean with no wet mixture on it. You may have to bake two at
a time, depending on the size of your oven. Leave the cakes in the tins for 10 minutes, then 5remove and place on a wire rack to cool fully.
In a large bowl, briefly cream 260g of soft
butter until smooth. Add the icing sugar from bag 5 gradually and mix well. Slowly add 40ml of milk until the buttercream is smooth 6but still stiff enough to hold its shape.
Place a small amount of buttercream in
the centre of the cake board provided and lay the green cake layer on top. Push down on 7the cake lightly to secure in place.
Spoon around 4 tablespoons of icing onto
the cake and spread evenly to the edges. Place the yellow cake on top. Continue alternating layers of icing and cake, using 8the orange and then the red layer.
Use the remaining icing to cover the top
and sides of the cake, using the flat edge
of a knife to smooth the surface. You only need to use enough icing to form a ‘crumb coat’ at this stage – some of the cake will still be showing through the icing. Refrigerate for 30 minutes, then decorate.
