care about this process, from the vine to the bottle.
Sometimes the client has an idea of what they want, but they don’t know where to source the fruit.
This is one of the areas where Donovan of Pallet Winery says they excel. “We source a lot of fruit
for clients,” she says. Since some of her clients are vineyards first, she can put the right people in
touch with each other.
This connection between people is an underlying motivation for Donovan. She sees her clients as
a group of like-minded people who can come together to share ideas, even if they’re all doing it
for slightly different reasons. She also believes that this community aspect is one of the benefits to
being a custom crush client in general.
Quady has a similar approach with clients. When asked why he refers to their process as “custom
wine craft,” he says it’s because they do more than just the crush. “We work with the client to
design the wine to their specifications,” says Quady. “We go through all the choices involved with
the client and create a custom wine, just for them.”
Graves agrees. “In some cases,” he says, “the client will leave all of the winemaking decisions to
us. But in other cases, there is a wine making plan that we have worked on together.” Graves also
mentioned that Naumes is one of the facilities that makes extra wines for large producers to their
specifications.
