COUNTRY HAM
AND SWISS MUFFINS
MAKES 10
½ cup minced country ham 1. Preheat oven to 400°. Spray 10 muff in cups with cooking spray.
2 cups all-purpose flour
2 tablespoons sugar 2. In a small skillet, cook ham over medium-high heat until crispy. Remove
2 teaspoons baking powder ham using a slotted spoon, and let drain on paper towels.
½ teaspoon kosher salt
1 cup shredded Swiss cheese 3. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add
¼ cup minced fresh chives ham, cheese, and chives, stirring until well combined.
¾ cup whole milk
¼ cup canola oil 4. In a small bowl, whisk together milk, oil, and egg. Make a well in center of
1 large egg flour mixture; add milk mixture, stirring just until combined. Spoon batter
into prepared muff in cups.
5. Bake at 400° until tops begin to brown, 20 to 23 minutes. Remove from
pan, and let cool completely on a wire rack.
