CREAM CHEESE-POPPY SEED ROLLS


                   MAKES 12



                   ¼ cup unsalted butter, soft ened  1. Preheat oven to 350°. Generously grease a 12-cup muff in pan with butter.
                   2 cups self-rising flour
                   1 cup milk                    2. In a medium bowl, combine flour, milk, cream cheese, and poppy seeds.
                   1 (8-ounce) package cream cheese,   Spoon batter into prepared muff in cups, filling each three-fourths full.
                    room temperature
                   1½ teaspoons poppy seeds      3. Bake until golden brown, 25 to 30 minutes.


                                                 NOTE: In order for this recipe to work properly, the cream cheese must be
                                                 at room temperature. If it is only soft ened, it will not incorporate into the
                                                 batter correctly.

                                                  These rich, tender rolls are particularly good when served alongside a
                                                  robust soup or stew, such as chili or chowder.
