Coconut Oil
A MULTITUDE OF HEALTH BENEFITS
You’ll find this oil in a significant amount of recipes throughout the
book. Coconut is high in saturated fat, but because it is a naturally
occurring saturated fat, as opposed to a hydrogenated trans fat,
coconut oil can be appreciated for many health benefits. According
to Joseph Mercola, MD, coconut oil can increase your metabolism,
improve heart health, increase thyroid activity, maintain an ideal
body weight, and improve your energy and immune system. It’s an
excellent cooking oil because it has a high smoke point. When other
oils like olive oil are heated to high temperatures, the beneficial
compounds of the oil actually start to degrade and can even create
potentially harmful compounds. And no, coconut oil doesn’t taste
like coconuts. If you are concerned about saturated fat, use it
occasionally and in small amounts, when you would normally use
butter or canola oil.
